Once defrosted add Sauce, cheese and additional toppings, using a peel place your pizza on the deck of the oven and cook for 2min then turn the pizza a half turn to ensure even cooking, continue this until crust is golden brown and toppings are fully cooked and piping hot this should be 3.30min – 4min, before serving.
When cooking through service and placing a pizza in the oven place it in a different location each time to ensure maximum deck temperature. If using the bases from frozen allow more time for the deck to recover its temperature in that spot.

Remove required stretched dough from freezer and place on pizza screens or on your stretching table to defrost for a minimum of 10min – 15min, this product can also be used from frozen but is best used from defrosted.
Once defrosted add Sauce, cheese and additional toppings, using a peel place your pizza on the deck of the oven while it is on slow rotation adjust the speed to fast and cook for 3min, check and continue until crust is golden brown and toppings are fully cooked and piping hot this should be 3min – 3.30min, before serving.
When cooking through service and placing a pizza in the oven place it in a different location each time to ensure maximum deck temperature. If using the bases from frozen allow more time for the deck to recover its temperature in that spot.

Build your fire in the middle of the deck starting with a small fire and gradually building to gradually raise the temperature of the deck to avoid cracking. Once you have an appropriate size fire established push to the back or side of the oven or lift into the basket, brush your deck clean and check the temperature.
Once deck temperature has been achieved maintain the fire so that there is a small amount of fire licking over the dome pushing heat down from the top to maintain deck temperature while not in use and to melt cheese and heat topping while cooking. Place one piece of wood at a time to top up the fire and maintain and even cooking temperature.
